Bread-making is a real labour of love and I can remember the days when the yeast would be warming in the airing cupboard until it was frothy and bubbly on the top, the first proofing of the bread, knocking back the dough and then that incomparable smell of the loaf cooking in the oven... Sheer heaven!

I have to confess that these days, like so many other people, I cheat and use a breadmaker! The mouth-watering smell is still there and the bread is nearly as good, but it's a whole lot easier!
